Delectable, delicious, delightful! After receiving this recipe I took a jar of Honey Satay Sauce home and tried it on my family! By normal standards I'd be pleased to have my kids eat half their meal without complaint but this dish had them licking their plates and asking for more! And it's a real adult pleaser too, so all in all this is not only a super easy meal to make but makes it super satisfying because it goes down oh so well! I can see this as being an ideal dish to serve at a dinner party too, again so easy to prepare and make but also stretches really far so perfect for a crowd!
1. Ingredients: (quantities were for 2 adults and 3 kids, adjust to your own needs):
350g boneless chicken
1 x 250ml Adventure Kitchen Honey Satay Sauce
1 x 400ml can of Coconut Cream
2 x tablespoons of Peanut Butter
1 x tablespoon of oil
Adventure Kitchen Chilli & Lime Infused Salt
(this for the adults at the table to give the final served dish a bit of kick without making it too spicy for the kids)
Basmati Rice to serve over
2. How to:
Slice boneless chicken into strips or chunks, heat oil in a decent size frypan, cook chicken until lightly coloured and no longer pink in the middle. Add to cooked chicken Adventure Kitchen Honey Satay Sauce, Coconut Cream and Peanut Butter. Stir through, simmer for 10 minutes or so on a medium heat until chicken is tender. Serve over rice.
The rich quality of the Honey Satay Sauce is what makes this such a winner, it's got to be tried today! Would love to hear any feedback from people who give this a go.
